Dear Luis, AM glad an active member of our club.am happy there is going to be celebration of a popular dish.i will be soo glad to make a popular dish from my country.am sure u will like it because it is a sumptuous meal loved by all.the name of the dish is nsala soup and pounded yam.it is prepared with catfish,uziza seed,ogiri,crayfish,pepper,utazi leaf and dry fish.it is usually prepared by washing the catfish first and set it aside then wash the dry fish with warm water,gring the crayfish and pepper set aside then grind the uziza seed set aside.slice the utazi leaf and uziza leaf as well.pound yam to thicken the soup.different kinds of meat can be added to the soup but this time we are preparing with catfish alone.when all the ingredients are ready,the pot is set on fire to per boil the yam after the yam is done,set the yam aside and pound then add all the crayfish,pepper,maggi,uziza seed into the water on fire.when it must have boiled add the dry fish then gradually add the catfish.after 2 mins add the utazi leaf and uziza leaf wait a while and bring down from the fire.by the time u taste the soup you will lick your finger.it is one of the fastest and most popular in my country because it is a delicious meal prepared by all families. i will be very glad if i will be given the opportunity to make a dish from my country.yours sincerely Azuka
